Chocolate Pan Cookies with Red Velvet m&m's

While I’ve been working on some new savory recipes to share with you, I made these Chocolate Pan Cookies with Red Velvet m&m’s in my spare time.

Ha, who am I kidding, I really don’t have much “spare time” these days!

Sometimes I think I work more than when I was a firefighter!

However, I did find a few minutes to whip up this batch of cookies.

And since I was crushed for time, I made them into pan cookies.

Because who doesn’t love pan cookies?

Little bites of cookie that are soft inside yet crunchy on the bottom! And you can bake them all at once.

Boom!

These cookies only take about 10 minutes to whip up!

That’s it!

The recipe for these chocolate cookies is adapted from Double Chocolate Chip Cookies over at Just So Tasty.

The only thing I changed was swapping out the chocolate chips for Red Velvet m&m’s and the preparation, which you’ll find below.

And just like that, a whole new cookie is born.

A delicious chocolate cookie made easy into a pan cookie and filled with Red Velvet m&m’s are a chocolate lover’s delight on Valentine’s Day.

Ingredients

  • 1 cup All-Purpose Flour
  • 2/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/2 cup + 2 Tablespoons unsalted butter
  • 3/4 cup brown sugar, packed
  • 1/4 cup white sugar
  • 1 large egg
  • 1 and 1/2 teaspoons vanilla extract
  • 1 – 9.9 ounce bag Red Velvet m&m’s

Instructions

  1. Lightly grease 8′ x 10″ cookie sheet or pan, or a 9″ circular pie pan. Set aside.
  2. In a medium bowl, add flour, cocoa powder, baking soda, and salt. Stir together with a fork. Set aside.
  3. In a large bowl, cream together butter, sugars, and vanilla.
  4. Gradually add in dry ingredients until mixed.
  5. Gently fold in Red Velvet m&m’s.
  6. Cover and place bowl into refrigerator to chill for at least 2 hours.
  7. Remove dough from refrigerator and let sit out for about 20 minutes room temperature.
  8. While waiting for the dough to soften, preheat oven to 350F degrees.
  9. After about 20 minutes, spread dough evenly into prepared pan.
  10. Place in oven and bake for 20 to 30 minutes. Inserted toothpick or knife should come out clean after piercing middle of cookies.
  11. Remove from oven and let cool for 5 minutes.
  12. Cut into squares and let cool completely before removing from pan.
  13. Cookies can be stored for up to 1 week in an airtight container.
