I know it’s been some time (like a month) since my last recipe, but I’ve been busy here at home.
I was trying to get my hotwire connected to my fence to help keep the pups in my yard and then I hurt my back.
I’ve been out with a sore back all week long, trying to heal and get back up.
How did it happen, you ask. Well, I did something stupid, which is how most people get hurt. (Ha-ha).
You see, I have a battery hooked up to my electric fence and it went dead. So after talking with a friend, it was decided that I needed a bigger battery (input Tim the Toolman’s laugh here – grunt, grunt, grunt).
Because bigger has got to be better, right?
Off to my local Wal-Mart store I went to buy a marine battery because this kind of battery can be discharged and recharged, which makes it perfect for my electric fence.
When I left the store, the battery was placed into the deep part of my shopping cart and I had to lift it out to place it into the trunk of my car. I knew this was going to be difficult, so I quickly glanced around the parking lot for a strong man to help me. Or any man.
None were to be found. (Sigh)
Anywhere. (Crickets chirping)
Me, being the strong independent woman I am, lifted that battery out of the cart and into my car trunk all by myself.
It was heavy and you think I would have let it be after that, but I really wanted my hotwire fence to be up and running that day
So, I removed the battery from my car after I got home and then moved it again to hook up to my fence.
Let’s just say, my back was feeling it that night.
In the morning, I woke up sore, but still moving, and was off to work.
I should have stayed home that day because I believe being at work was a bad idea. I ended up going home early and by the time I got home, I could barely walk.
The next morning I couldn’t move. I started experiencing muscle spasms as I tried to get out of bed. I was stuck lying in bed for what seemed like hours as I tried to maneuver my way off. The thought of calling 911 to come help me get out of bed crossed my mind, but I had no way to let them in if I did call.
Inch by inch, I slowly moved across my bed, muscle spasm, relaxed, then moved again until I could roll off the bed.
Once I was up, the spasms subsided, but my back was hurting like crazy.
That was the last night I slept on my bed.
I moved everything (sheets, blankets, pillows, comforter) to the floor and I’m still sleeping on the floor as I write this.
I did go to my doctor and she gave me some medication to help relax my back muscles. My back is getting better, but it seems to be taking forever.
I have so much to do right now!
Luckily, I took photos of these delicious Nutella Fudge Bites before I hurt my back.
I did have to make the recipe again since I had about three different versions written down and forgot which one was best.
I do that a lot, write recipes down multiple times and then try to decide which one is best.
Between forgetfulness and my back, this getting old stuff sucks!
I’m too young for all this!

These Nutella Fudge Bites tastes too wicked to be good for you! Chocolate hazelnut Nutella mixed with almond butter, oats, flaxseed, honey, brown sugar, and almonds are combined to make this fudge-like, chocolatey, deliciousness. Gluten-free and dairy-free.
- 1/2 cup Nutella
- 1/2 cup Almond butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon hazelnut extract
- 1/2 cup honey
- 1/4 cup brown sugar
- 4 Tablespoons ground flaxseed
- 1/4 cup oat flour
- 1/2 cup old fashioned oats
- 1/2 cup whole almonds
- Prepare 8″ x 5″ dish by greasing with coconut oil. Set aside.
- Add Nutella, almond butter, vanilla, hazelnut extract, honey, and brown sugar into a large mixing bowl. Stir together until creamy.
- Mix in remaining ingredients. Mixture will be thick like taffy.
- You may need to knead the almonds into the dough with your hands. Place dough ball into prepared pan and flatten with hand or fingers.
- Cover with plastic wrap and place into refrigerator until chilled, about 2 hours. Overnight is best.
- Cut into small bites size pieces and enjoy!
- If you prefer a more fudgey-like texture, use only 3 Tablespoons ground flax seed instead of 4.
