Sure I have my other loves of lemon and coconut, but I really do love chocolate. And I’m really loving these Double Chocolate Protein Chia Pudding Parfaits. After all, who doesn’t love chocolate?
I always feel better after having just one bite of chocolate, like all my troubles are gone. Poof!
Maybe that’s just me?
Chocolate really is the one and only comfort food. Whether it’s chocolate, dark chocolate, or mocha chocolate, the end result is happiness. Chocolate makes you happy.
And you don’t need scientific research to prove that point.
Now I try not to make a lot of chocolate recipes because then I eat them. And I have to eat my chocolate in moderation. Who can stop with just one bite of chocolate?
Not this girl.
So after making my last chia pudding parfait, I decided to make a healthy chocolate chia pudding so I can indulge my chocolate cravings. And I didn’t stop with just chocolate, I made a mocha chocolate chia pudding too!
Chocolate. Mocha chocolate. Together.
Not only is this Double Chocolate Protein Chia Pudding Parfait a sweet, creamy treat you can eat for breakfast, snacks, or dessert, but they’re practically guilt-free. Yes, a guilt-free chocolate treat! There’s no refined sugar, and they’re dairy-free, gluten-free, and vegan.

Chocolate and Mocha come together for a double dose of chocolate in this Double Chocolate Protein Chia Pudding Parfait thats both creamy and chocolatey. Makes for a delicious breakfast, snack, or dessert. This pudding parfait is also dairy-free, gluten-free, refined sugar-free, and vegan.
Ingredients
- 1 cup unsweetened coconut milk
- 1 Tablespoon unsweetened cocoa powder
- 1/2 teaspoon vanilla extract
- 2 Tablespoons honey
- 2 Tablespoons vanilla protein powder
- Dash of sea salt
- 6 Tablespoons chia seeds
- 1 cup unsweetened coconut milk
- 1 Tablespoon unsweetened cocoa powder
- 1/2 teaspoon vanilla extract
- 2 Tablespoons honey
- 2 Tablespoons vanilla protein powder
- 1/2 teaspoon Starbuck’s Via Instant Caffe Mocha Latte
- Dash of sea salt
- 6 Tablespoons chia seeds
Instructions
- In a small bowl, whisk together all ingredients EXCEPT the chia seeds.
- Gradually add in chia seeds, stirring after each addition. This helps to prevent clumping of seeds.
- After chia seeds are mixed in well, cover and place in refrigerator overnight. After a couple hours, stir pudding to help prevent chia seeds from clumping together (they like to form clumps in your pudding).
- In the morning, remove from refrigerator and find a creamy chocolate chia pudding to eat.
- In a small bowl, whisk together all ingredients, including instant Caffe Mocha Latte, EXCEPT the chia seeds.
- Gradually add in chia seeds, stirring after each addition. This helps to prevent clumping of seeds.
- After chia seeds are mixed in well, cover and place in refrigerator overnight. After a couple hours, stir pudding to help prevent chia seeds from clumping together (they like to form clumps in your pudding).
- In the morning, remove from refrigerator and find a creamy mocha chocolate chia pudding to eat.
- Layer Chocolate Protein Chia pudding and Mocha Chocolate Protein Chia Pudding in a small glass or parfait cup with sliced bananas, dark chocolate chips, cocoa nibs, and/or granola.
Notes
- The cocoa powder and protein powder will seem unable to mix in, but keep on whisking and it will eventually mix together (about 4 to 5 minutes by hand) with the other ingredients.
- You can use chocolate protein powder instead of vanilla.
