The pumpkin bug has bit me! I don’t know when, but I think it was after I made my vegan Date Caramel Sauce. It just got me in the mood for Fall recipes.

And since then, I’ve been craving pumpkin. I even had a pumpkin smoothie this morning! So don’t be hating me for this recipe, I can’t help myself.

I really don’t think you’ll be hating me anyways, not after you try this Pumpkin Caramel Chia Pudding Parfait because it reminds you of Fall, with its cooler days and pumpkin spices. Something I’m looking forward to after this hot, dry summer!

Pumpkin Caramel Chia Pudding Parfait

Maybe that’s why I’ve been craving pumpkin in August, I can’t wait until it cools off and this is my way of trying to get Fall to hurry on up. That and Fall is my favorite season.

I love pumpkins, apples and pears, the spices, baking, and Halloween. It’s one of the loveliest times of the year!

And I might have started a little earlier than most with pumpkin recipes, but can you blame me for combining pumpkin and caramel together? Especially in a dairy-free, gluten-free, refined sugar-free pudding you can eat for breakfast, as a snack, or for dessert.

I think not.

Anyways, eating pumpkin is not frowned upon like wearing white after Labor Day. You can enjoy pumpkin all year round if you like, and no one will stare at you.

Pumpkin and caramel come together in this creamy Pumpkin Caramel Chia Pudding Parfait. Eat this guilt-free parfait for breakfast, as a snack, or as a dessert. This delicious pudding parfait is also dairy-free, gluten-free, refined sugar-free, and vegan.

Ingredients

For Pumpkin Chia Pudding:
  • 1 cup unsweetened coconut milk
  • 1/2 cup pumpkin puree
  • 1/4 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon cinnamon
  • 2 Tablespoons maple syrup
  • 1 Tablespoon honey
  • 6 Tablespoons chia seeds
For Spiced Pumpkin:
  • 1/2 cup pumpkin puree
  • 3 teaspoons honey
  • 1/4 teaspoon pumpkin pie spice
  • 1/4 teaspoon cinnamon
For Caramel Chia Pudding:
  • 1 cup unsweetened coconut milk
  • 5 Tablespoons Vegan Date Caramel sauce
  • 3 teaspoons honey
  • 1/4 teaspoon vanilla extract
  • 6 Tablespoons chia seeds
  • Dash of sea salt

Instructions

To make Pumpkin Chia Pudding:
  1. In a small bowl, whisk together all ingredients EXCEPT the chia seeds.
  2. Gradually add in chia seeds, stirring after each addition. This helps to prevent clumping of seeds.
  3. After chia seeds are mixed in well, cover and place in refrigerator overnight. After a couple hours, stir pudding to help prevent chia seeds from clumping together (they like to form clumps in your pudding).
  4. In the morning, remove from refrigerator and find a creamy pumpkin chia pudding to eat.
To make Spiced Pumpkin:
  1. Add all ingredients into a small bowl and mix together. If you make this the night before, cover and place into refrigerator. If you make it before putting together parfaits, set aside.
To make Caramel Chia Pudding:
  1. In a small bowl, whisk together all ingredients EXCEPT the chia seeds.
  2. Gradually add in chia seeds, stirring after each addition. This helps to prevent clumping of seeds.
  3. After chia seeds are mixed in well, cover and place in refrigerator overnight. After a couple hours, stir pudding to help prevent chia seeds from clumping together (they like to form clumps in your pudding).
  4. In the morning, remove from refrigerator and find a creamy caramel chia pudding to eat.
To make parfaits:
  1. Layer Pumpkin Chia Pudding, Spiced Pumpkin, and Caramel Chia pudding in a small glass or parfait cup.
  2. Optional: Top with Vegan Date Caramel Sauce, unsweetened flaked coconut whipped cream, or granola.
