Avocado Chocolate Mousse

A healthy Avocado Chocolate Mousse that not only taste delicious, but is also good for you!

Funny thing happened when I was making my avocado fudgesicle recipe. You see, I had a little extra leftover because all my popsicle molds were already filled to the brim so I saved the extra in my refrigerator until I could fill an available popsicle mold.

When I went to scoop out the extra fudgesicle filling, I noticed it was thicker than when I had put it in the container, almost mousse like.

After filling my popsicle mold with most of it and not wanting to waste any (because it was, after all, chocolate!), I proceeded to eat the remaining with a spoon.

That’s when I found out that my avocado fudgesicle recipe is the same for a vegan avocado chocolate mousse!

So with my curiosity getting the best of me, I made another batch. You know, just to be sure.

And do you know what? It does make a chocolate mousse that one would never guess was made with an avocado!

It’s so light and fluffy and even has little pockets of air in it just like a mousse!

Healthy Avocado Chocolate Mousse

Even after being in my refrigerator for a couple of days because I forgot it was in there (blonde moment), it still maintained its initial texture and didn’t get runny or juicy.

So you can use this recipe to make two different desserts that are healthy AND chocolate, avocado fudgesicles or chocolate mousse.

What better way to enjoy your summer than with a chocolate treat you can enjoy two ways?

A healthy Chocolate mousse that’s light and airy and made with no eggs. This chocolate mousse contains coconut milk, avocado, dates, cocoa powder, honey, and vanilla. You’ll never guess its dairy-free and refined sugar-free.

Ingredients

  • 1 ripe avocado
  • 1 can (13.66 ounces) coconut milk, room temperature
  • 3 Tablespoons unsweetened cocoa powder
  • 8 Medjool dates, softened and diced
  • 2 Tablespoons water – to heat dates in
  • 3 teaspoons honey
  • 1 teaspoon vanilla extract

Instructions

  1. Add whole dates and 2 Tablespoons of water into a small bowl. Heat in microwave for 1 minute. Let cool. After dates have cooled, remove seed and dice.
  2. Add dates plus water used to heat them up, and remaining ingredients into a high speed blender. Pulse on High until all ingredients are pureed and mixture is thick.
  3. Scoop into airtight container and chill at least 4 hours in the refrigerator before serving.
  4. Top with coconut whipped cream, chopped nuts, fresh raspberries, fresh diced strawberries, flaked unsweetened coconut, grated chocolate, or sprinkles.
  5. Store remaining in an airtight container in refrigerator for up to 1 week.

Notes

  • To make 8 servings, double recipe; 12 servings, triple recipe, and so forth.
  • Can use leftover mousse to make avocado fudgsicles by placing into popsicle molds and freezing.
